Homemade Pizza Sauce

The best thing about this Homemade Pizza Sauce, is that you can control what goes into it.  It's not salty, it has great flavor and is my go to sauce when making pizzas or calzones.


This sauce is a little thicker in texture compared to a Marinara Sauce for dishes like Chicken Parmesan.  It's not runny and perfect for pizza or calzones. 

Ingredients

2 tbsp of extra virgin olive oil
1-28 oz can of Crushed Tomatoes
1-12 oz can of Tomato Paste
1-8 oz can of Tomato Sauce
1 med size onion chopped small
4 garlic cloves-Minced
1 tsp of sugar
1 tsp of salt
1 tsp of black pepper
1 tsp of dried oregano
1 tsp of dried sweet basil

In medium size pot add the olive oil, garlic and onions..cook on medium heat until the onions are translucent. Cook for about 5 minutes.  Add the crushed tomatoes, tomato paste, tomato sauce, sugar, salt, black pepper, oregano and basil. Cook until nice and thick, about 15-20 minutes.

Lasagna Roll Ups

This is a nice twist on a fabulous dish.  These Lasagna Roll Ups are not just delicious, but easy to make and serve.  I love making traditional lasagna, but I hate the mess when trying to serve it.  When you make it this way, all you have to do is pick up each individual roll up and place on a serving plate.

Baked Pasta Casserole

One of the best things about serving a casserole is that you can feed a bunch of people all at once.  This Baked Pasta Casserole is perfect for that.  It's meaty, cheesy and delicious.

I had a Christmas dinner with my church sisters and I was asked to bring a dish.  I decided to make this dish because I knew that it would be a hit.   I made it a couple of hours before the dinner and since everything was already cooked, all I had to do was bake it until the mozzarella cheese melted and browned.

Green Beans, Garlic and Oil Pasta with Crusted Parmesan Chicken Tenderloins

Weather is starting to change, and I'm noticing my flowers are looking a little sad. Fall season is my favorite, and living in Georgia, I get to see the leaves change colors, from green to purple, orange, red and yellow.  When I think of Fall, I think of so many comfort food dishes.  Desserts made of pumpkins and apples to pot roast and root veggies.

But today, I wanted to make pasta, simple but with great flavors..so I decided to make it with just garlic and oil and throw something green in it..like green beans.  And as a protein, Crusted Parmesan Chicken Tenderloins.

Penne Rigate Pasta with Turkey Meatballs

My husband and I went to lunch with a couple of friends and we had an awesome time. I had a very light lunch and by 6 o'clock I was already starving.  I wanted to make something quick and so I went for Penne Rigate Pasta and Turkey Meatballs.

These meatballs are made using lean ground turkey meat instead of ground beef and veal.  It's a healthier choice and I love the fact that the turkey is not really greasy.

Chicken Parmesan

Every time I visit an Italian restaurant the first thing I do is look at the menu to make sure they have Chicken Parmesan listed.  I've been to many Italian restaurants but, I always go back to my two favorite locations.

My first choice is Prime Italian on South Beach Florida.  Their Chicken Parmesan is to die for.  The chicken breast is pounded very thin with a nice crust. My second choice is La Torreta, in Weston Florida.  This is a family own restaurant, and their Chicken Parmesan is really tender, cheesy and simply delicious.

This Chicken Parmesan recipe is one that I have done many times.  This is a classic Chicken Parmesan recipe that you are going to really enjoy.  The chicken is very tender with a nice crust and the homemade sauce just makes it even better.
