Peach Cobbler

This past weekend my husband and I decided to go visit my sister Diana in South Carolina and go pick peaches from one of the farms in the area.  I went to a farm named "Blacks" in York, SC.  When we got there we were told that they were allowing people to pick White Lady Peaches only. I, myself, had never heard of these kinds of peaches, and so I asked for a sample.  I fell in love instantly. These low acid, high sugar white fleshed  peaches have a flavor that will melt in your mouth.






These  pictures were taken at the farm. These are White Lady Peaches. White Lady Peaches are sweeter and have delicate flavors with honey and vanilla undertones.

The red-skinned fruits are medium to large and very firm.  They are delicious, nice and crunchy.





















Here we have a picture of the Yellow Peaches.  Very similar in color, but so different in taste. Yellow Peaches range in taste from tart to sweet, depending on how ripe they are. Both Yellow and White Peaches are great for eating fresh, in salads, desserts, grilling and even canning






On this picture I want to show you the difference in color. The Yellow Peach and the White Lady Peach..both are delicious.

With so many peaches, I decided to make Peach Cobbler.  This recipe was made using Yellow Peaches, but you can use either one.  It's a delicious dessert and so easy to make.  Here is my recipe.










Ingredients:

8 Peaches, peeled, pitted and sliced into wedges
1/4 cup white sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch or flour


Topping Ingredients:

2 1/4 cups baking mix (recommended: Bisquick)
1/4 cup sugar
1/4 cup (1/2 stick) butter, melted
1/2 cup milk
Cinnamon sugar (1/4 cup sugar combined with 2 teaspoons ground cinnamon; store in an empty spice shaker jar; shake well before each use)

Preheat oven to 350 degrees F

In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, 1/8 nutmeg, 1 tsp lemon juice, and 2 tsp cornstarch or flour. Toss to coat evenly, and pour into a 2 quart baking dish.


To make the topping:
In a bowl combine 2 1/4 cup of biscuit mix, 1/4 cup sugar, 1/4 (half of stick) melted butter, and 1/2 cup milk. Drop bits of dough, using a spoon, on top of the peaches. Sprinkle with cinnamon sugar.





Bake for 45 minutes until the top is golden brown and crusty. I just took the cobbler out of the oven, the house smells like Thanksgiving.  Enjoy with some vanilla ice cream!
