The Simple But Perfect Pancake

There is nothing better than waking up to the smell of homemade pancakes.  This recipe is my go to recipe, is really simple but delicious.  You can add  blueberries, sliced bananas or even apples. The pancakes are fluffy and really tasty.


You can make the pancakes small or a little bigger.  Enjoy them with some maple syrup.

Ingredients:

2 large eggs
1 1/4 cups of milk
2 tsp vanilla extract
3 tbsp melted butter
1 1/2 cups all purpose flour
3/4 tsp salt
2 tsp baking soda
2 tbsp sugar

Beat eggs, milk and vanilla until light and foamy, about 3 minutes.  Stir in the melted butter.  In a separate bowl whisk together the flour, salt, baking soda and sugar.  Quickly add the dry ingredients to the egg mixture. mix well.  Let the batter relax for a couple of minutes.


Butter a griddle or pan and drop about 1/4 cup of batter.  Cook on one side until bubbles start to form then turn the pancake over.  Makes about 16-3 inch pancakes. You can refrigerate the batter overnight.
