Happy Hour: Coconut Margarita

Thanks God is Friday, happy hour has arrived.  I was trying to figure out what to drink today, and I came across this recipe that includes Coco Lopez and orange liqueur, I knew it had to be good.

I had my husband taste it first, and all he said was "You are going to be my bartender for now on", So I knew I had just found a really delicious drink.  

This Coconut Margarita was the perfect drink on this cold Friday sitting by my fireplace relaxing and enjoying my family.  Make this drink, sit back and relax, no worries and enjoy!!!



 The toasted coconut has such a great aroma.  This is by far one of my favorite drinks.


The coconut and the lime is such a great combination.  It almost taste like a key lime pie with a little bit of coconut.  Fantastic drink!!

Ingredients

1 cup sweetened shredded coconut
1/2 tsp salt
1/2 cup lime juice, plus 2 tbsp for glasses
3/4 cup cream of coconut, Coco Lopez
1/2 cup plus 2 tbsp tequila
1/2 cup cointreau or other orange liqueur


Preheat oven to 350 Degrees F

On a rimmed baking dish, toss coconut with the salt. Spread on sheet and bake in the oven, stirring frequently until golden brown, about 8-10 minutes. Let cool, then crush with your hands until crumbly.

Pour 2 tbsp of lime into a shallow dish. Dip rims of two cocktail glasses in the lime juice, then in coconut mixture, coat well.

Combine all other ingredients with one cup of  ice in a blender. Puree until smooth, divide evenly between two glasses and serve immediately.  Serves 2
