Green Beans, Garlic and Oil Pasta with Crusted Parmesan Chicken Tenderloins

Weather is starting to change, and I'm noticing my flowers are looking a little sad. Fall season is my favorite, and living in Georgia, I get to see the leaves change colors, from green to purple, orange, red and yellow.  When I think of Fall, I think of so many comfort food dishes.  Desserts made of pumpkins and apples to pot roast and root veggies.

But today, I wanted to make pasta, simple but with great flavors..so I decided to make it with just garlic and oil and throw something green in it..like green beans.  And as a protein, Crusted Parmesan Chicken Tenderloins.


I used Farfalle pasta, also known as Bow Tie pasta.  I have used spaghetti and penne pasta before for this dish.  So you can use any pasta you like.



Grated Parmesan is great for this recipe, but I used shredded cheese instead.  You can also combine the grated parmesan cheese with  Panko or breadcrumbs.



Make sure to dip the chicken tenderloins in the egg first and then into the parmesan cheese.  Keep the heat on medium, because you want a crust to form.  If the heat is too low the cheese will stick to the pan, and the chicken will not have a crust.



I love string beans, but you can use any vegetables you want, broccoli or asparagus would be good too.  Cooking the beans for just a minute is enough, you want a nice crunch.



The pasta absorbed the great taste of the olive oil and garlic. The chicken is nice and tender and the crust is really crispy.  Perfect meal and took less than an hour to make. 


Pasta Ingredients

1 pound of pasta cook al dente 
1/3 cup olive oil
4 garlic cloves minced
1/2 pound of green beans

Cook the pasta of your choice, make sure to add oil and salt to the water.  When pasta is cooked drain and set aside.  In a pan add the oil and garlic cloves, cook on simmer for about 5 minutes.  In another pot boil some water and cook the green beans for about a minute or so, the drain. You want the beans to have a crunch.  Add the pasta and the beans to the garlic and oil.  Toss to combine well.

Chicken Ingredients

2 chicken breast cut into tenderloins
2 eggs beaten
2-3 cups of shredded or grated Parmesan cheese
olive oil for frying


Season the chicken with garlic and onion powder.  One at a time dip each tenderloin into the egg, and then into the grated parmesan cheese.  Make sure the tenderloins are covered in cheese.

On medium heat add enough olive oil to cover the bottom of a frying pan.  Cook tenderloins 3 at a time until they are cook through and golden brown, cooking on both sides. Enjoy with your side of pasta!!

I moved away from Georgia a couple of years ago, disappointed that there was no PR community there. I must have missed something. Anyway thanks for some great ideas here for cooking! I especially loved the beef empanadas.

    1. Hi Helen, I'm happy you found my blog. I cook all kinds of dishes. But I am Puerto Rican. When I first moved to GA, I thought the same thing. But Puerto Ricans are here just hidding. We are every where. Glad you are enjoying my blog. Thank you!
