Low Carb Chicken Quesadillas

This past Saturday night my husband and I couldn't decide on what to eat.  Do we go out or stay in?  My husband was extremely tired and I really didn't feel like going out.  I decided to make Chicken Quesadillas.  Simple and quick.  While my husband slept and my doggy chewed on a bone, I started cooking. 


These chicken quesadillas were made with a low carb tortilla, and low fat cheese. As a side I had low fat sour cream and I had a couple of avocados just sitting there, and before they went bad, I made guacamole. 




This chicken was so delicious that on Sunday, I had a small bowl of leftover without anything else. 



These tortillas are Mission Brand, and even though they are low carb, I didn't taste anything different.  There are a few different low carb tortilla's on the market.  Buy a couple and try them out.  They are pretty good.



It looks like a lot of cheese, but the cheese is the glue that keeps the quesadilla together..so add a little extra.  And make sure you add enough chicken too. 





Debating on whether to use butter or cooking spray to cook the quesadillas...butter won.  I figured everything in the quesadilla was low fat and low carbs, a little butter would be ok.  The butter made the quesadilla nice and golden brown and extra crispy.  delish!!



Extra crispy and cheesy, what is there not to like.


Ingredients


2 chicken breasts skinless and boneless, diced
 salt and pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp of cumin
1/2 tsp of cayenne pepper-optional
2 tbsp olive oil
1 green pepper, chopped
1 red pepper, chopped
1 med onion, chopped
8 low carb tortillas
cooking spray or butter
2 cups of a mix of low fat shredded cheeses, Monterey Jack, Cheddar, Asadero
low fat sour cream and guacamole


Season the chicken with salt and pepper, garlic powder, onion powder, cumin and cayenne pepper.  Heat a skillet with the olive oil and add the diced chicken breasts.  Saute the chicken for about 10 minutes.  Add the green peppers, red peppers and onions.  Cook for an additional 5 minutes.

Lightly grease another skillet with cooking spray or butter and add a tortilla.  Start adding the chicken with peppers and onions and the cheese.  Top with a second tortilla.  Spray or butter the tortilla so that when you flip it, it's already greased. 

When the tortilla has turned golden color, carefully flip the tortilla to the other side. When the tortilla is nice and golden brown on that side, take it out..continue the process with the other tortillas and chicken.  Cut each Quesadilla into 4 pieces and enjoy with low fat sour cream and guacamole.
