My husband likes to make healthy smoothies, and beets is always one of those veggies he likes to include. However, I have never really been a fan of the taste. I find that beets taste like dirt..grainy and just not appetizing.
I had been watching a cooking show and they mentioned that roasted beets were delicious. Roasting them will bring out the sweetness, and taste amazing. So I decided to make them. Why not, they are good for you and I figure there are not many veggies that I don't like, so let me just try it and see.
I roasted the beets and I was really surprised. The roasted beets have a similar taste to corn, fresh corn. At least that's what it tastes like to me. The beets turned out sweet and not grainy. I will make this again for sure.
I think my husband preferred them in his healthy drinks. I prefer it this way.
Ingredients
1 pound of beets, greens trimmed and washed
1/4 cup olive oil
1 tsp of sea salt
1/2 tsp fresh ground pepper
1 tbsp fresh lemon juice
Preheat oven to 400 Degrees F
Coat the beets with 2 tbsp of olive oil and wrap with foil. Place beets in a small roasting pan and bake until tender when pierced with a fork, about 45 minutes.
Unwrap the beets and let cool for 10 minutes. Slip off the skins with a pairing knife. Cut them into quarters and toss with the remaining olive oil, salt, pepper and lemon juice. Serve warm with your favorite protein. Enjoy!
