Cornmeal Tortas

Cornmeal Tortas is a Puerto Rican fritter made from cornmeal usually eaten for breakfast with a nice cup of coffee.  I grew up eating cornmeal tortas and flour tortas.  My mom used to make the best.

My nephews and nieces love them too. My husband enjoys eating them but with a little bit of maple syrup.  Sometimes late at night I get the cravings and I just have to make a batch.



This recipe makes a lot of tortas.  You can heat then up the next day, and will still taste delicious.
Ingredients:

2 cups of cornmeal
1/2 cup of all purposed flour
1/2 cup of sugar
1/4 tsp salt
3/4 cup of milk
3/4 cup of evaporated milk
1/2 cup of water
2 tbsp butter or margarine
1 tsp vanilla
2 eggs
oil for frying


In a pot add the milk, evaporated milk, water and butter.  Heat until just before boiling. In a bowl mix together the cornmeal, flour, sugar, and salt.   Slowly start to add the milk to the cornmeal mixture.  Mix well, add the eggs one at a time, mixing quick. Add the vanilla.

In a frying pan on medium heat add enough oil to just cover the tortas.  Drop big spoonfuls of the cornmeal mixture. Leave space between each torta.  Make them as big or as small as you want.  Fry them until golden brown.  Enjoy with a cup of coffee.

  2. I'm Puerto Rican. My mom never made them for me. lol I will make for my family and me to try. My aunt makes tortas de calabaza.....now those are so good too! Will check this site for the recipe. :o)
