Onion and Pepper Frittata

This morning I wanted to have a meatless frittata.  I had a heavy eating weekend and I really didn't want to have anything too heavy for breakfast.  This Onion and Pepper Frittata is really easy to make, and you can add anything you want to it.




You can add bacon or sausage, spinach, mushrooms, even tomatoes.  Make it your own and add whatever it is you enjoy.  This recipe is really simple, but very fulfilling.


This frittata is perfect for brunch.  If you are having company, just double or triple the recipe. Enjoy!!


Ingredients

5 eggs
1/4 cup thinly sliced red/green peppers
1/4 cup thinly sliced onions
1/2 cup Mexican blend cheeses
1/4 cup milk 
salt and pepper to taste

Preheat oven to 350 Degrees F

In a bowl beat the eggs and add all other ingredients. Spray a small oven proof skillet with cooking spray.  Stir in egg mixture. Cook over low heat, while lifting set edges of frittata with spatula and tilting pan to allow uncooked mixture to flow to bottom until eggs are almost set, about 5 minutes. Bake 6 minutes or until knife inserted in center comes out clean. Transfer frittata onto serving platter. Enjoy
