Strawberry Shortcake

As promised, here is a fantastic and delicious Strawberry Shortcake recipe. This dessert is perfect for Valentine's Day.  Make this for your significant other, and they will love you even more.  This is a really easy recipe to make and the results are impressive.

You can never add too many strawberries or whipped cream to this dessert.  Adding sugar to the strawberries brings out the juices and gives them a fabulous flavor.  The whipped cream is creamy and smooth and not over whipped,  That makes a big difference.

The biscuits are cooked for about 12-15 minutes depending on how big you make them.  They are crunchy on the outside and nice and soft in the inside.  I made a total of 6, but you can make them smaller if you like and make 8.  Split the biscuit in half and add the strawberries and the whipped cream and enjoy!!

Ingredients

1 1/2 cup all-purpose flour
1/4 cup sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/3 cup cold butter
1 egg, slightly beaten
1/2 cup sour cream
2 tbsp milk
5 cups sliced strawberries
3 tbsp sugar

Preheat oven to 400 Degrees F

Lightly grease a baking sheet; set aside.  In a medium bowl combine flour, the 1/4 cup sugar, the baking power, baking soda, and salt.  Using a pastry blender or fork, cut in butter until mixture resembles coarse crumbs.  In a small bowl combine egg, sour cream and milk.  Add to flour mixture, stirring with a fork just until moistened.

Drop dough into six mounds onto prepared baking sheet.  Bake for 12-15 minutes or until golden brown.  Transfer to a wire rack and let cool.

Meanwhile, combine 4 cups of the strawberries and 3 tbsp of sugar.  Using a potato masher or fork, mash berries lightly.  Set aside.  To serve, split shortcakes in half; fill with strawberry mixture and whipped cream.  Put on the top layer and add more whipped cream and strawberries.
