I wanted to start the new year eating healthier than I have been for a little while now. I wanted to make something quick, delicious and figure friendly. I made this Steak, Onions and Peppers Wrap using all low fat ingredients and the wrap is low carbohydrates too.

Low Carb Cheesecake with Fresh Strawberries
While sitting outside on my back deck this past weekend, lost in my own thoughts, I was thinking how good it would be to have a nice slice of cheesecake and a cappuccino. For a minute I thought, Dulce de Leche cheesecake would be so good...Yeah right! No, I need to make something that I won't feel guilty about eating..maybe a low carbohydrates cheesecake. Yes!!

Low Carb Chicken Quesadillas
This past Saturday night my husband and I couldn't decide on what to eat. Do we go out or stay in? My husband was extremely tired and I really didn't feel like going out. I decided to make Chicken Quesadillas. Simple and quick. While my husband slept and my doggy chewed on a bone, I started cooking.

Coleslaw Low Carb style
Coleslaw is one of those thing I enjoy eating during the summer with BBQ chicken, ribs or even steak. Here is a really easy recipe that you will enjoy.
In a bowl add the coleslaw mix..then add all of the other ingredients. Mix really good.
Refrigerate until ready to eat, Enjoy!!
Ingredients:
1 bag of shredded coleslaw mix
3/4 cup of mayonnaise
3 tbsp of apple cider vinegar
2 Splenda envelopes or 1 tbsp regular sugar
pinch of salt
pinch of black pepper
