Meatloaf and Mashed Potatoes

While out and about with my hubby  I asked him if he wanted to have Meatloaf and Mashed Potatoes for dinner and he said "I'm not gonna say no to that".  Meatloaf is one of those dishes that my hubby and I enjoy very much.  This is a dish that I only make about three times a year.  We love it even more the day after.  The best part is making a sandwich out of the leftover with a little ketchup on top.  Love it!




Meatloaf is a comfort food that I enjoy making on a cold Sunday evening.  Sundays are relaxing to me, I love sitting by my fireplace under a blanket doing nothing.  Except cook a great meal that my hubby and I can enjoy.
 


I like using McCormick Meatloaf mix, it has all the ingredients you need for a great meatloaf.  I then add eggs, some onions, bread crumbs..and that's really it.


Some people like to add ketchup to the meatloaf..I like to add tomato sauce.  The ketchup adds a sweetness to the meatloaf and so I rather use tomato sauce instead.

 

This meatloaf is nice and soft..juicy and super tasty.  Just add your favorite gravy, some veggies, mashed potatoes and enjoy!


Ingredients

2 pounds ground beef
1 cup dried bread crumbs
2 eggs
1 pkt McCormick meatloaf mix
1 small onion diced
1-8 ounce can tomato sauce
1/2 tsp black pepper
gravy jar-store bought

Preheat oven to 350 Degrees F

In a bowl, stir together the ground beef, bread crumbs, eggs, meatloaf mix, onion, and black pepper. Mix well.   Add half of the tomato paste to the bottom of a baking pan, shape the meatloaf and place in the baking pan, pour the rest of the tomato sauce over the top.  Bake in the oven for 50-60 minutes. Enjoy with Mashed potatoes, gravy and some veggies.
